Ceylon Green tea, from Sri Lanka, leaves are a light green colour and rolled less tightly than Gunpowder tea from China. These fairly large nuggets of leaves unfurl when placed in water. The liquor is light, well-balanced and refreshing. It offers sweetness balanced with a hint of sharpness and subtle vegetal undertones. It is ideal as a refreshing summer afternoon tea or after exercise as it is a good rehydration and relaxes the mind.

A small number of estates in Sri Lanka, formerly Ceylon, produces green tea, and they compare well with those from China and other green teas. It has a more delicate flavour in comparison to the strength and occasional bitterness of Gunpowder.

We recommend this as a green tea to caterers, because it is more forgiving in preparation than Chinese green teas, it does not become so bitter if over-brewed.


To brew: one teaspoon per person into a warmed pot add boiled water which has cooled for 1 minute.  Brew for 2 minutes. Drink without milk.
