China Ti Kuan Yin Oolong tea is the very finest Oolong from China. It is the speciality from Formosa (a region in Taiwan) and of parts of China This tea was a gift from Kuan Yin, the Goddess of Mercy, to a farmer. Ti Kuan Yin means Iron Goddess of Mercy. Oolong tea is semi-oxidised and is somewhere in between a green and a black tea.

The leaves are green and rolled into large tight balls, producing a tea with a pale yellow colour. The taste is a mild, melony, biscuity flavour with a sweetness that comes through, it has a stong sweet aroma. The taste is unique and must be tried.

To brew: one tea spoon per person into a warmed pot or mug infuser and pour on fresh, boiled water that has been cooled for a minute. Allow to brew for 2-3 mins and strain. Best drunk without milk or sugar. The leaves from this tea can be re-used, they can be used to make as many as 7 infusions without losing its aroma, each subtly different.
